Pancake Mix
2 cups of flour
1 1/2 tsp ground cinnamon
1 cup apple sauce
1/2 stick melted butter
1 1/2 cup milk
1 tsp sugar
Mix all ingredients together, pour the amount you want
in hot greased skillet until holes come through top,
flip over until browned.
Serve with butter and syrup

Italian Cream Cake
2 cups sugar
1 stick butter, softened
1/2 cup shortening
5 eggs
1 cup buttermilk
2 cup flour
1 tsp baking soda
1 tsp vanilla extract
2 cups coconut
1 cup pecans
1/2 stick butter, softened
2 3-ounce pkgs cream cheese, softened
1 box confectioners' sugar
2 tsp vanilla extract
Evaporated milk
Cream first 3 ingredients in bowl. Beat in egg yolks,
1 at a time. Add buttermilk, flour, soda and 1 tsp vanilla; mix well.
Stir in coconut and pecans. Fold stiffly beaten egg whites gently into batter.
Pour into 3 greased and floured cake pans. Bake at 350 degrees for 25 to 30 minutes.
Cream 1/2 stick butter and cram cheese in bowl. Add confectioners' sugar and 2 tsp vanilla with enough evaporated milk to make of spreading consistency. Beat well. Spread between layers and over top and side.
